Mutton
in the Desert
Over the
years I have come to believe that food can be cooked with minimum spices and that can be palatable and healthy too. However,
one can add more, according to taste.
And believe
me, it is yummy!!
Ingredients:
Mutton: 1
kg
Mustard oil
(optional): two table spoons
Onion: one
big size (100 grams approx.)
Garlic: 5/6
cloves
Ginger: one
inch, thinly chopped
Cumin: half
tea spoon
Green
cardamom: 4/5
Clove: 4/5
Bay leaf: one/two
(small)
Turmeric
powder: half table spoon
One big
green chilly turning red (optional, one can put more!!)
Salt to
taste
Method:
Heat oil in
a pot and add cumin, cardamom, clove, bay leaf, ginger, garlic and chilly. When
they splutter, add onion slices and sauté till they turn golden then add
turmeric powder. Now wait for one minute and then add mutton pieces and
sprinkle some salt and cover the pot. Cook on the slow flame and enjoy the
cooking time by doing something else you like to do! It will slowly cook with the water of the onion
slices and the fat of the meat. And after 45-50 minutes you can check if the
mutton is cooked by piercing a knife/fork into the mutton piece.
Enjoy it
with rice, chapati or paratha!
